Colour: Pale lemon-green
Aroma: Intense typical varietal aromas of citrus and kiwi fruit, gooseberry, fresh cut grass and green capsicum. Herbal notes of fennel, dill and crunchy celery sticks add complexity and freshness.
Palate:The wine is dry, mineral driven and has a chalky texture. It is filled with citrus fruit flavours like pomelo, fresh lemon juice and lime zest; as well as white peach and fennel flavours. The elevated acidity delivers a clean zesty finish.
Grapes: 100% Sauvignon Blanc from the Tamar Valley and Coal River Valley
Winemaking: Sauvignon Blanc grapes were picked at optimal ripeness in early April. The grapes were promptly pressed under dry ice cover, and the free run juice separated and clarified to maximise the wine’s aromatic potential. The cool fermentation lasted approximately two weeks and was monitored daily. Clear wine was racked from its lees and left to mature in tank for several months prior to bottling.

Serving: Salads packed with herbs and greens like Tabbouleh, “Moules Marinieres”, spring vegetable risotto or goat cheese.
